You should definitely stand up for yourself and make sure you inform the owner that you’ll be over capacity. Having more money or an increase in salary is not going to decrease your likely hood of burning out fast. So stand firm and say exactly what you need.
You will do this work for a short period of time but you need 2 other people, and if you do not get it in a month, you need a raise and one other person
Then it’s time for you to look for work else where. You should start exploring your options now. Don’t wait until it’s too late.

If it has been less than 24-48 hours from the staffing change. The owner is probably spinning just as much as you are.
Have a crucial conversation with the manager to determine what has to be handled and what can be done later when the owner onboards another staff member. If all the balls in the air has to keep juggling, find out which ones are glass and which ones are rubber.
Prior to the conversation, work through your original workload for things like this. If you are familiar enough with what the other two were doing, then try to do some pre-emptive suggestions as well.
There are lots of great office folks out there. The owner could find from a temp agency real quick.
