It's really pretentious to sign off with a thank you,

Nah, it's just what we've settled on. It's either "Thanks" or "Best". If you're emailing someone abroad "Regards" is also acceptable.
I put “thank you” and my first name, in addition to the signature block. It doesn’t matter that much tho - if you’re getting slighted by a sign-off, you’re probably overdue for a vacation..

Never use Thank You as signature. They have done studies on this and it is worst possible sign off you can use that lowers perception of you.
If you send a conversational email, use a word you would actually say out loud. Not like “Happy to help! Let me know next steps.
Best, / Kind Regards”.
Doesn’t actually annoy me, just reminds me how young the sender is or think they’re still nervous about emailing professionally.
I always put my first name unless it's an email to annoying OC then I don't even bother signing it. Or just "Thanks."

I add my name. Mostly because I have an uncommon name and it triggers me to no end when people respond to my emails and assume my last name is my first name.
Same. But also signing my first name doesn’t stop people from assuming my last name is my first name.

My general approach is that if it’s an informal thread with colleagues in the team who I work with frequently and someone senior to me drops salutation or both salutation and sign off, I’ll respond in kind (or will sometimes still do sign off). If the partner does that to me on a thread but there is another more senior partner copied, I usually still keep salutation and signoff but honestly just go by vibe and err on side of including. I always include in client emails but will go more informal if they do first (like “[client name] - got it, we can do that. Thanks!”). At this point it’s habitual and I rarely think about. Sometimes in my quick skim before sending, I’ll adjust if think I’m being too informal/quick in my response
Most of the time, I just write “Thank you,” and have my firm signature at the end. But if I want to make it seem more friendly/personable, I’ll say “Thank you,” and then just my first name.

I include first name and just have the sign off and my name included as part of my default signature in Outlook so it automatically appears with the sig block.
"Peace Out" or "Holla Back" are the only acceptable sign offs, followed by your name of course -- we aren't animals after all (OK, I guess we actually are).
