So it's pretty much any thing altered from its natural state, ranging from like pre-washed spinach which is 'minimally processed' to ultra-processed stuff like soda or chips. Your muesli or canned beans fall into the "processed" category if they contain added ingredients like sweeteners or preservatives, but they can still be part of a healthy diet if they’re nutrient-dense and low in additives. Cheese and protein bars vary because natural cheeses where the ingredients are just milk, salt, and enzymes are less processed than cheese spreads. I'd never eat a protein bar with a long ingredient list .. they're definitely ultra-processed.
Processed food has been given a really bad name. There are absolutely so many good whole foods that are accessible, but there are also a lot of technically processed foods that are so good for you! I wouldn’t focus on the technicalities of it personally. Focus on nutrition that works for you.
Agree with the comments above. Processed food is food with added things to it. So anything that comes straight from the earth like fruits and veggies is not processed. But there are many things people consider to be processed that aren't at all.
