I prefer a townhouse or a walk up with a back door because I like being able to quickly walk out to the car to load/unload stuff or to take the dog out. I hate a labrynth of hallways and waiting for an elevator.
I preferred the condo with all the amenities you’re listing. Of course, if you’re looking to buy, the monthly HOA fee will have to be calculated into your budget.
If you’re renting, go for the apartment. Getting out and about will help you meet people and help you feel more comfortable with your new neighborhood.

I’d go with very few amenities. You end up using them way less than you’d thought yet you’re forced to pay for them, that could just be a “me” thing though.
For example, I will always have a regular gym membership bc it offers classes I like and has more/better equipment and has a more vibey ambiance. Nice mailrooms offer just about zero utility. I don’t own a dog, so I dedicated dog patch is pointless yet I’d be paying for it. I don’t need building security A) bc luckily I’m a big guy who usually isn’t the ideal target for a crook B) I picked an apt I can keep very secure to begin with and have good entry/exit visibility.
This. Also often I realized a lot of my friends host more than I do ( and also have way better amenity buildings lo) so usually I wasn’t even using it
I used to really love the extra perks of having a gym, but everything else is something I look for inside the apartment. In unit laundry, dishwasher, not things that are necessarily deal breakers, but make a huge difference when you get used to having them, and then don’t anymore. Understand not wanting to pay more for things you aren’t there enough to use!

The HOA that comes with all those amenities is just sunk cost imo. And you almost never use it nearly enough to justify the cost
If you already use those kinds of amenities (in-house gyms, pools, office space), yes; if not, maybe not. You’re unlikely to create a new habit to use them if you’re not around them.
It’ll be helpful to have a mailroom to collect packages and guard them from porch pirates, especially when you’re traveling.
I’ve found client travel is still not the norm (still <25-50%) so I’d consider other aspects (location, nearby activities, budget, etc) before planning for my absence. That said, if your teams are already traveling, by all means plan for it.
