In an employment at will environment (assuming US) you process the resignation. Assuming they plan on coming in their last day, I’d probably do a quick check next with them. You can’t force someone to work. Now if they are in a union or your policy requires a certain notice period in order to receive unused vacation payout - follow the policy.
If not - wish them well
Start the offboarding process. Do you have an SOP or any guidelines in place? Ensure accounts are deactivated so they can no longer access them asap. Good opportunity to start documenting this process if nothing is currently in place.
^this. Follow your normal process for an employee giving notice, just skip past what happens during the normal two week period since they're leaving immediately. Did anything happen with this employee that would cause them to leave so suddenly without giving notice? That's a rarity in my experience, have to admit I'm curious about the circumstances.

I would follow policy and document everything. I have seen immediate resignations handled as voluntary termination without notice.
