As a guy who has hired trans and nonbinary people, I prefer you use the name you choose. The paperwork is just paperwork.
I used my preferred name on job applications until I got it legally changed, but added a disclaimer to cover letters that there would be a discrepancy between my the name on my application and my legal name that they may want to be aware of, and that I would answer any questions they had in that regard if clarification was needed. I'm not sure if that's the "correct" way to do it, but it's what I did until I got the name changed. I ended up getting my name changed before I got hired anywhere, also, so it's hard to say if it would have been an issue, either.

Well, yes, paperwork may be paperwork, there’s more paperwork that needs to change, and to support the you’re gonna have to provide to support the change. The thing is if you apply for a job with the name like “Charles” and your I-9 information says “Charles”, then explaining why “Susie” is showing up is going to be a problem. If you’re looking for a job, the whole point of the interview process is to get a snapshot of the person to begin a line of understanding and respect and to get an idea of their level of responsibility so right away, that would be a reason for a red flag for me. It’s kind of like if your knowledge doesn’t match your résumé your name should in theory match your documentation… You know? And you know at an interview in a competitive job market any little thing is enough for the employer to move on, you want to answer more questions than you create.…
