Repeat after me: “Thank you for your patience.” Women apologize too much as it is, and it’s even worse at work. You shouldn’t be apologizing unless you did something wrong.
I don’t say thank you for your patience unless the person has specifically asked me where it is. Most people don’t remember the deadline they set / the deadline was flexible and I don’t want to remind them it’s late.

Mixed feelings on the other comments - no need to apologize if you let the person know well before the deadline that you are unable to meet it and will need more time. You should absolutely apologize if you blow a deadline with no notice.
I try not to acknowledge in writing if I can help it. Why create a paper trail that will stick around outside of any context? I’ve been copied in on email chains before where there’s an apology multiple emails down on the thread. Now I and everybody else on the email knows that person was late. So if necessary, I will try to call and acknowledge I’m running a bit behind schedule, let them know when to expect it, and then my email delivering work product does not reference that conversation, just starts right off with “Here is the draft ______.”

If it’s clearly my error, and I should have done something differently, I will apologize. But if there’s just way more work than I can get done that is a management issue.
