I don't. I say what I think the interviewer wants to hear. Everyone does. You have to play the game to get the offer.

Same here! It feels silly to be honest when you know your honest answer is the opposite of what the interviewer wants to hear.
No hiring manager wants to hear that the candidate they are interviewing is already burnt out and will not be able to cope with the job. This is not a time where honesty is the best approach. Say what you have to say to get yourself hired.
I think you should only talk about limits once you're established at the job so you have some leverage to work with. They wouldn't want to waste resources training you just to let you go. Of course, be reasonable as well, don't go into a job that you don't think you can handle.
