On a more serious note, if kids don’t want to participate, why fight it? Just go to the lesson. If you have the reluctant ones any time after lunch, they’ve probably had ice-breakers/team-builders in every other class and are tired of them. Some kids see them as phony and not worth the effort. Introverts may hate the forced interaction. Then there are kids who participate in them not because they super like them, but because it cuts down on class time.
If you don’t want to fully cut out those activities, you could switch it up. Instead of at the start of class, try it in the middle or even the end. Or do them every other day or intermittently. Who knows? Maybe the reluctants will miss them!
Then again, I’m an introvert and I always hated being forced into ice-breaker/team-building activities. 😬

I understand where you are coming from. I hate the icebreakers they make us do during faculty meetings. I one class is at the end of the day. They're basically done by the time they get to my class.
Have a plastic cup and a rubber band. Maybe four strings coming off of the rubber band.
Each kid on a four person team grabs the string.
They can only touch their string. Can't touch the cup, can't touch the rubber band. They try to get it around the cup to pick it up and move it.
You could have them build a pyramid or contribute to a class structure.
Make a rule that they must do it without talking.

I used this in my class with lesson on communication. The kids really got into it.
Team building is a great way to start the year. Once the nervous energy wanes, the silliness and giggles come out. We used to do ropes training for middle school but that was back in the day. Good luck!

This might seem too kiddie/physical but I try :) game called Fruit basket
Every person has a different fruit name to be referred to by (example Sally is Apple, Mark is Orange). In a circle standing up, everyone says their fruit name.
One person is in the middle and they say their fruit name and the fruit name of someone they are about to tag (“pineapple to watermelon”). That person needs to deflect by saying another persons fruit name (“watermelon to cherry”) so they don’t get tagged.
The person who goofs up by saying the taggers fruit name, a fruit name no one is using, or wasn’t able to offer a fruit name before being tagged is now in the middle.
In the middle of the game whenever you’d like, you can say “fruit basket” which means everyone except the tagger changes their standing position
