lol. This post might as well have been “I accepted the job offer but it’s below my required salary, what should I do?”
If they are at the point that they're running conflicts, they are interested in you and would like you to work there. I would email them sooner rather than later and let them know you had a vacation planned in May. If they are not understanding, then you wouldn't want to work for them anyway.

Just tell them right away. I had a vacation planned that coincided with the start of my job as well, and I actually told them this in the interview when they asked about start dates. They were completely cool about it and appreciated me telling them so far in advance. Don’t delay any more
I have had the same thing happen in the past. I would let them know sooner rather than later. I have always told them in the interview if I knew ahead of time but definitely tell them on your first day.
I’m going through conflicts at this moment, and technically I wouldn’t start for another week.
I typically let jobs know when I accept
Just let them know, it’s not a big deal
