Just word it in a way that's professional.
"I feel in my current position that my current workload is overwhelming and doesn't allow me to create projects that meet the high standards I set for myself. I feel like I would fit better in a workspace that allows for realistic and reasonable deadlines, which would enable me to meet said high standards."
or something like that. Do it in a way that praises yourself while not putting the fault on anyone in particular. (which I know can be hard. Just know that you can let it all out in the Glassdoor review)
It's not likely that your feedback will result in any change to the toxic environment. If they are willing to do an exit interview, you can (professionally) share your concerns and why you felt it wasn't a good fit.
Sadly, the work has gotten so commoditized at a lot of firms that they know they can hire someone else if you (or others) are not happy.
And yes, for sure share your experience at that firm on Glassdoor. People need to know.
