How easy it is to hit billable hour target at the firm, delegation of work, types of assignments to expect, if they lateraled, why they chose said firm
It’s simple, but I found that asking what associates like about the firm can often tell you a lot about it (especially when you compare it to what you don’t hear).

Also ask where they see themselves in 5 years. If none see themselves at that firm that tells you something.
Also I would not assume the associate interviews will be relaxed (although they may seem that way), especially if they are senior to you. I was always very nice to junior associates I was interviewing but I was trusted by my main partner and if I (as a mid level to senior associate) didn’t like someone they were not getting hired. We had a small and close knit team so I’m sure that’s not always the case but just be careful. I’ve also had fellow associates grill me when I was getting interviewed for associate positions.
If you used a recruiter to apply for the job, I'd do a Zoom prep session/mock interview with the recruiter. This is something I do with all my candidates and I like to think it's helpful. :)
