Short answer is it depends. Longer answer is our average utilization hovers around 75-85 % but it has several random peaks and valleys.

Depends. Depends a lot on your clients and timelines. There are ebbs and flows but there are definitely evenings and weekends sometimes and then there are weeks of almost not client billables. I’ve had 5 hour weeks and 70 hour weeks.

I'm entertaining guests and picked up a black summer truffle on a whim, trying to decide what to do with it. I've got some rib eyes and will be making mashed potato as well (among other things).

After sous vide and searing the steaks I was going to cook fresh rosemary and thyme in some butter before spooning them over the steaks while resting to heat them up a bit immediately before serving.

I think I've got my truffle 101 now so sounds like (cont)
