If he his hosting it at his house, the standard thank you is something to drink. Followed by flowers or something else that complements the meal. ( for example dessert )
And Emily Post and Ms Manners still agree that a handwritten thank you after the event is still appropriate protocol.
I would never show up at someone house with a gift card as a thank you for being invited.
Oh if at the house you can get creative. Tell her to go to the farmers market tomorrow and grab something fun. Jar of jam, bottle of hot sauce, a cool spread and bread. Doesn’t have to be a bottle of wine. But that’s easiest

Go to the dinner. Learn a little bit about professor. Drop a thank you note the following week on their desk at school with a tiny token of it makes sense.

Local coffee shop gift card, or other local business gift card, $25 and a handwritten card
I also disagree with gift cards. Maybe flowers (especially if the professor is a female).
Was the whole class invited? If not, a gift could be seen as a bribe for a grade. I would stick to a thank you note in this case.
