You just tell them
Just tell them you recieved an offer you can’t say no to. Tell them you really appreciate everyone and your time there. Then give your 2+ week notice and let them know what your last day will be. Don’t feel bad, you’re doing what’s best for everyone in the long run. Ask what you can do to wrap up or hand things off and stay positive.

Don't overthink it, but also don't let them know until you are 100% positive that the new job is a sure thing. You don't want to find yourself unemployed again if the new job falls through. Your current job isn't going to like it, but that is their problem and not yours. Give your short and sweet two week notice letter. Congratulations on the new job and good luck!
Before you say anything at your current job, make sure the offer is absolutely solid, everything is signed, and there's no chance of things going sideways. Then you can just tell your current employer that you got an offer you can't pass up. Just be honest and professional, but make sure the other job is totally in the bag first.
