Just apply. I applied to a lot of jobs with more than 100 applicants and one of them had even more than 1000 applicants that I even got an interview. it is though recommended to get connected through their HR or recruiter or apply directly to their website.
The LinkedIn number just shows the number of people who clicked the button. It does not necessarily mean they completed the application. So you probably shouldn't get scared off by just that number.
Also a lot of people apply to jobs on LinkedIn regardless of if they meet the basic requirements the job. For every job my firm advertises on LinkedIn, there are always at least a few dozen resumes from people who require visa sponsorship when we don’t offer it.
A week-old job post is not something I’d put a lot of effort into, just to be honest. If you really like the job, meet all qualifications, go for it. Just try to focus on ones that are posted that day.
Never know, I personally would still apply. But I also wouldn’t bother writing a cover letter.
What do you have to lose? Your resume doesn't tell everything about you. Just do it.
