I like the Romulans - I think there is a lot of unexplored potential there. For instance, what were the “urgent matters” that kept them away for so long until the TNG episode “The Neutral Zone”?
Romulans are to the sith as vulcans are to the jedi. Plus their ships run on a cool propulsion system and they have cloaks

I think the Ferengi are mine. They were trash when they were first introduced, but I think by the time DS9 came around, they were fleshed out and we could see that people can be more than what their culture portrays them to be.
Also, I think they are the species that humans are the most similar to.
Klingons are the classic answer here. Or “Clingans” as they are pronounced in much of TOS.

My favorite has the be the Romulans. Always have an agenda. Can never be trusted. One of my favorite scenes is when they lure the Enterprise across the neutral zone in The Defector
