Meatball Marinara Submarine Sandwich

Husband wanted a Subway meatball marinara sandwich so I made it for him.

I slow cooked the meatballs in marinara sauce for 6 hours. Topped with provolone cheese, Parmesan, fresh Basil, and banana peppers.

Greek Yogurt Pancakes

These pancakes are delicate on the inside with crispy edges thanks to the coconut oil.

Ingredients:

2 eggs
4tbs of milk
2/3 cup of Greek yogurt
1/2 tsp vanilla
1tbs sugar
1tsp baking powder
3/4 cup AP flour
Coconut oil

1. Mix wet ingredients except coconut oil.

2. Add dry ingredients

3. Mix until just combined

4. Coat griddle with coconut oil

5. Pour 1/4 cup of batter.

6. Flip when golden brown in bottom. Cook other side for 2 more minutes

Is carbon steel supposed to look like this? I’ve seasoned, reseasoned, wash with mild soap and water, dry it over the stove, avoid cooking acidic foods in it and it still looks like this. It used to be way blotchy before but it has gotten darker on the bottom and has gradually moved its way up.

I don’t know if I’m doing it right. I’m used to the black patina of cast iron.

He’s eating solids now. 🤣 This is an Ulster Fry, a typical Northern Irish breakfast aka heart attack on a plate: Fried eggs, fried potato bread, fried mushrooms, fried tomatoes, pork sausages, UK bacon, black pudding, and beans.

Would you eat this? First and last time, I took one bite of each, I could feel my arteries clog.

Grilled Lemon Fennel Chicken, Roasted Parmesan Broccoli, Garlic Chive & Dill Mashed Potatoes

It’s the end of the week when I use up all my fresh produce.

Seasoning for Chicken: Ground Fennel, Garlic Powder, Momofuku Seasoning, Paprika, Salt, Pepper

Roasted Broccoli: Olive oil, Salt, Pepper, Garlic Powder, Lemon Zest. Shave Parmesan and squeeze lemon after roasting.

Mashed Potatoes: Yukon Gold potatoes, milk, butter, chives, dill, garlic powder, white pepper, salt.

Crispy Rice Paper Dumplings with Chicken Lemongrass and Ginger

I repurposed the leftover ground chicken I used to make matzo balls by adding ginger, lemongrass, sesame oil and soy sauce.

First time working with rice paper. So delicate. Fried in air fryer at 400F for 14 minutes flipping 1/2 way.

Dipping sauce: rice vinegar, soy sauce, hot chili oil, chili crunch, sugar, fresh chives.
