Get it in writing, or if you’re desperate for the cash, take the job and keep applying for other bits in the meantime. Currently all you have is ‘Trust me bro’.

I'd be skeptical of that. And that's not really a criticism of the cafe or the people running it. It's just a reflection of the business. They can't really say for sure what will be happening months from now, so realistically they're not in a position to make promises. If you need a job, you might as well take it and be optimistic that you'll move to full time.

Yeah I wouldn't trust that. Especially being a cafe compared to a chain store or something they can be likely to say they didn't say that...
It's not uncommon either for small businesses especially to say whatever they have to say to get an employee to stay with bad hours, whether it's true or not. OP, get it in writing if you can, but I would probably job hunt and take an actual full time offer if one comes along.
Would get a clause in your contract. Wouldn’t be trusting that!

I’d treat it as a possibility rather than a guarantee. Promises like that do happen, but things also change quickly in hospitality depending on staffing and sales. If you’re comfortable starting part time that’s fine, just make sure the role still works for you even if the full time move takes longer than expected.

It’s happened to me twice. One place offered me a raise and health insurance after 90 days. The owner kept dragging his feet and at the 6’month mark he said he could only do health insurance for me and not for my family as originally promised. Started applying to other jobs right away and left a week later.
The time I took a part time position with the promise that it would be full time “in a few months”. I left that one after 6 weeks of starting and took another position that had offered me a little less pay but full time & commission right away.
It doesn't matter if they put it in writing or not. The State of CA is "at will" employer. They can change their mind as long as they give you notice - (like a 2 week schedule) and it's legal. I just spoke to the CA labor board today as my employer is doing just that - changing my days to days they know I can't work...AND my schedule is on my official job offer letter from over a year and a half ago.....it doesn't matter. Go with your gut - do you have a good feeling about the company? Is there growth potential that you're actually interested in? Is this where you see yourself in a year? Ask yourself the questions - it's not always about money,....choose your happiness first!
