Any craft beer brewers here?

In the last two year I’ve gotten more and more into alcohol free beer. The selection in my country (Europe) is still small and mainly driven by the big brands (e.g. Heineken). My idea is to start my own small brewery which only produces alcohol free beer as a bit of a pendant to the booming local craft beer industry. Really confused as to whether to incorporate my NY- based makeup startup as an LLC or an S-corp? Not based in NYC if that matters and no revenue yet. Should I be looking into Delaware at all (specifically a Delaware C-Corp) if I do plan on raising capital at some point down the line? So...I started my own company in 2018. Things went off like a ROCKET. Its a small Remodeling company and we specialize in higher end bathrooms and kitchens etc. I love working with my hands. I also have my education though and...I am going to return to tech work. I just wonder..when is enough enough? When do you pull the plug?
