Lots of good recommendations in here, if you’re staying in LA it’s not an issue, but if you’re going back to the midwest or think he’ll feel self conscious wearing a rolex never knowing anyone with them growing up, Grand Seiko could be a good option. Plenty of choices in the 5-7k range and to those that don’t know it’s “just a seiko”
And I didn't mean that in a derogatory way; just stating facts.

As a wedding gift, I’d think about a basic Datejust. Seems to be a better match for that sort of occasion than a sportier watch.
41mm is most in style, but I prefer 36mm. Blue is gorgeous but might be tougher to get; Black is probably achievable.

When it comes to Datejusts, there isn’t anything about the configuration that makes one “feminine” vs “masculine”, unless we’re talking about a pink, purple or floral dial, or a tiny size like 31mm.
There are pros and cons to any configuration, but when something is a gift like this, it will be special no matter what. Use your best judgement to choose what you believe looks good to your eye, and that you believe will look good on his wrist. It’s almost impossible to go wrong with a DJ (which is why it just might be the most popular watch in the world). You won’t win any points for creativity, but it will never go out of style.
The most tried and true, no-risk option is the black dial, smooth bezel, and oyster bracelet. It can do anything and it will always be a good choice. Other dials, bezels, or bracelets just up the “interest”, “bling” or “flashiness” level, which only you can gauge for your soon-to-be hubby.

All this talk made me want to get a watch myself now. I tend to get myself a new purse when I hit a milestone like a promotion. I think I’ll look at a watch next time

you can get a great “nicer” watch for $10k. new rolex will be difficult to come by due to demand, but plenty of good pre-owned or grey market (i.e. someone bought new and is flipping unworn for a profit) available below $10k.
otherwise pretty much the whole omega catalogue, lots of jlc, iwc… you have a lot of options. what style are you looking for? sport watch? dress watch? what shape?

I’ve decided on Datejust 41, white gold, fluted, jubilee, and….. can’t decide on white or black. I’m leaning towards the black for the contrast. Also any opinion on dial numbers or Roman numeral?
Finally, as a wild card, for $2k more I also love the black with diamonds. 😍
I know my fiancé’s taste and he would love any of the above. Definitely the 41 though.
I dislike diamond markers, period.

Rolexes are tricky to get at MSRP, especially if you haven’t bought watches from that AD (authorized dealer) before. Also, $7k is a lot to spend on a first lux watch for someone who hasn’t even had the chance to refine their watch palette and learn what they like and don’t. I’d recommend looking at Tudor, my favorite model is the Black Bay 58. Or an Omega, maybe a Seamaster or Speedmaster. These are all well under $7k, the Speedmaster just by a little and they are all very very nice lux watch brands that would be hard to not like and a good watch for him to have enough skin in the game to figure out which other watch styles he may enjoy. Rolex’s are great watches (the hype is worth it), but everyone has different styles of Rolexes they like, for instance if you got me that Rolex you posted as soon as I learned a bit more about watches I would kinda have wished it was the version with the fluted bezel. All that being said, Tudor and Omega are two super iconic/legendary/badass brands but I think my top pick would be a Tudor BB58, buy it from an AD that also sells Rolexes and be nice to them so you get good notes on your account so if you and your husband decide to get a Rolex down the road they don’t immediately snub you and put you on their fake waitlist and maybe you can get on their real waitlist.

Lots of great opinions here, just wanted to add that I think, for a datejust, 36mm is the way to go regardless of wrist size. You said he’s not flashy, and I think 41 definitely calls more attention.

Rolex DJ because he’ll enjoy it for life rather than a “beginner” watch. If you go and talk to an AD now and explain exactly what you’re hoping for and you’re aware that there’s a wait they might squeeze you in within the timeline.

For me definitely fluted - gives the watch more presence and pops. The way it catches and reflects light is great, sometimes I sit there moving my wrist if the sun catches it and watch the reflected spots move around the room. The smooth bezel is just a bit meh, maybe a bit feminine?
I just think the 36mm is way too small. But agree on a Rolex, great investment as well
