Yeah maybe if you commit IP theft or do something unethical, then expect trouble. Life is far too short to be afraid of what your former employer might do.

The company could go after you… usually it’s only pursued if they took clientele with them and took away business. But I think it’d just be like any other a civil law case.

It's a legally binding document, and yes, you very well will land in court if you directly break any of the terms. Working for a competitor isn't the issue, it's any activity that would potentially harm your former employee, most notably stealing business, but also sharing IP and other non-proteected information that may give the compeitor an advantage.
That said, California, Minnesota, Montana, North Dakota, Oklahoma, and Wyoming do not enforce non-competes, just don't do anything thst is illegal otherwise.
