I have mine organized this way:
Welcome Letter
Daily schedule with description of expectations during each part of the day.
Student needs
Lesson Plans ( for unplanned or emergency absences. if it is a planned day off, I print out what I want taught and leave it on the table on top of the binder)
Additional supplemental activities
Important School Info (safety protocols, evacuation map, lockdown procedures,etc)
Luckily, I am rarely out and if I am, my para teaches the class and they put a sub in her role. My para is so awesome, she barely needs the plans. She knows how I run my room and what to do!

I don’t have a para. I am going to use these ideas though
