Switch !!.
I stayed back when my company matched the offer. I had a great WLB, team was also good and I thought it would work out in my favour.
But next year they gave only 2% appraisal, which I was confident would have been much better in the new company.
So, I would never do that again, and wont advise anyone to do the same.
If the company valued you, there wouldn't have been such a big gap in pay in the first place.

Wipro: 2 rounds+ HR is cleared for 23LPA. Offer rollout will take 2 weeks.
BNY: I cleared 2 technical rounds, they’ve said another manager will take a technical round as Previous position was filled.
Altimetrik: 1st round cleared.
I’m not sure who should I wait for but I’m willing to take a risk. Question is if I don’t get any other offer and want to get retained will infosys managers agree for retention+promotion at last minute?

Get retained for an year if there's an email confirmation and look for a switch next year on the updated ctc
I would suggest you to stay if you don’t have issue with these,
1. WLB
2. Salary
3. Whether you wanted to relocate or not
4. Hybrid culture
5. Most importantly colleagues
Because it is extremely hard to impress folks at new companies especially if it’s a big MNC. So, stay for a year and switch that would be a proper jump. It may not seem big going from 16 to 21, but I can say for sure until 30LPA every lakh matters. So it is easier to stay than to switch.
For 21LPA, around 17.5-18 will be fixed, rest will be variable. And once your level grows your variable decreases. Utilise your NP to leverage 21LPA to a higher CTC and then decide during your last week of NP.

Stay there and keep giving interviews... see carefully for 3 months over there how things goes if something sees unusual switch at same moment you will get hike on 21 lpa

Actually, from 5 lpa to 16 lpa in 5.5 years is a very good progress. Accept the offer and stay back wherever you are, coz you have handled things already there. I'm staying in TCS for around 8.5 years, accepted the offer for 5.8 lpa and my CCTC is 7.8 lpa, I didn't switch due to some reason. But, if you compare these companies you are much better. So stay back here!
Stay, they trust you and give you a word. He will talk and this is about his reputation if he talks and you still leave, which is understandable. The ctc is nice according to your experience as well.
In long term, you will be more trusted and know more people and more likely to be safe in layoffs.
Connections matter. Other things matter too, which you haven’t mentioned but only on these basis, I would have stayed.
People will say switch, that is a general say to any scenario here.
Stay back and try for on-site
I was trying every year couldn’t get it. And my current project doesn’t have onsite opportunity.

What’s your tech ? 5.5 to 16 in 6 years is a pretty big bump.
If you have offers outside of Services / SIs like BNY switch for better WLB and generally better employee friendly policies ( do your own research). However, on-site in GCCs will be very rare compared to SIs.
