What about the National Geographic shows on Disney+? Or all the Planet Earth shows done by BBC (shows about Mountains, Fresh Water, Caves etc, along with some animal stuff mixed in)?
Also check out HHMI Biointeractive on YouTube. They may be a bit old for him but they are designed for classrooms.

Public television (PBS) has great shows on weekend mornings for kids. Science, space, nature, farming. I watch them myself and have learned a lot from the content. I love PBS.
Our almost 8 year old is super into Greek myths right now and we’ve been reading Percy Jackson + other series by Rick Riordan, watching the Disney series, and listening to the Greeking Out podcast.
Does he also get to watch fun stuff? IMO at that age not everything has to be educational! We love Ninjago, Camp Cretaceous, Is It Cake and the Great British Baking Show, some of the less violent Marvel movies for family tv - it all makes for great conversation. No YouTube aside from occasional clips (music videos to kpop demon hunters on jimmy fallon lol - he’s pretty in tune with pop culture!)
My 8 year old also loves Is it Cake. American ninja warrior too, and he’s totally been more active because of it, trying to create his own ninja challenges. He sometimes watches Lego Masters reruns on Fox too!
Also, the pbs games app is great too. Simple, wholesome games. Some of them are geared toward younger kids but not all

Magic school bus, bill nye, and wild kratts. Also some youtube child friendly DIY videos. Primitive technology channel is interesting.
There’s an app called EPIC! With a lot of great fun educational videos for kids my 7 year old loves, in addition to books out loud.
We enjoy Storybots on Netflix, Skillsville on PBS Kids, The Secret Museum also PBS Kids, Kid Cosmic on Netflix
Simpsons. And Bob’s burgers. So wholesome.
Top chef, British baking, or other cooking shows. Encourages cooking. BB is so sweet.
America Ninja Warrior. So motivational and uplifting. Encourages fitness and some activities / sports your kiddo is old enough to do - rock climbing, obstacle courses, gymnastics.
Olympic finals. You learn about the globe and sports while seeing the fastest, etc. human beings on the planet.
My son loved Phineas and Ferb at that age. It’s a cartoon, but the kids are inventive and clever.
Can you stream PBS kids somewhere if you don’t have cable?

I have an 8 and 11 year old - my reccs from the past few years:
May toe the line of inappropriate but my kids loved the YouTube series Oversimplified - humorous and iirc mostly clean animations about historical events; pretty long form too (I hate the attention destroying short videos on YouTube). I also learned a lot!
Montemayor videos (also YouTube) about WWII were a huge hit also and prompted a visit to the aircraft carrier in sandiego as well as my older daughter reading a three part series of old man books about WWII.
Veratassium is another great one explaining science concepts; some are too advanced I think for kids particularly around math but the vast majority are pretty good to great. There was a great one recently about escalators. I find Rober too shallow/chaotic, check this out if he’s also not your style.
My 8yo DD also loves some guy who builds terrariums with different animals on YouTube.
With respect to shows - right or wrong “kids” shows don’t really hold the attention of mine. We’ve had luck with old school X-men, Batman, spiderman (pretty quality if not educational). They also liked Horatio Hormblower (found on YouTube). More recently, Star Trek TNG (though sometimes a little scary, we watch with them).
Wild Kratts on PBS, How it’s Made and Over the Garden Wall on HBO, and Phineas and Ferb on Disney+ are wildly popular with that age group in our house. If you are open to some YouTube, there a bit of Crunch Labs with Mark Rober in there, too.
