Ha! Don't worry it's happened to everyone at some point. I would just give full points if the students been turning in their homework (and doing well on it) and seems to know the material. Chances are they'll respect you more for owning up
I've lost one assignment ever. And it was a test. It was a kid with an F in class. I offered him the median score, which was a B-. He gladly accepted.
Just be open and honest. Kids know mistakes happen.
He turned it in. He still failed, don't worry lol I knew when I offered it that it wasn't going to be enough to bring him up to passing.
Give full points. Honestly, it will make this good work even harder to try and keep it. One of my colleagues a while ago on literally the first test and I am this is no joke. Her dog ate one of the kids test papers now the teacher had already kind of glanced through things, but I didn’t fully marked it, and the student would’ve failed, because she had to market basically full credit, it actually pushed the student so much more to strive to keep her grade as close to everything possible as she could. Because the student also knew that she did not do well, but she so deeply appreciated that my colleague gave her basically full credit.
If he’s a reasonable student just tell him what happened and have him do a few problems that were on the test to see if he really knows. If he’s hasn’t been found much, I’d have him retake entire test.
Let them take it again in tutoring and apologize. Help more than normal, so there are no hard feelings.

Maybe the students mistakenly put the test in his folder, or binder. I have had that happen twice! Knowing I keep all of each classes papers clamped together, I knew I didn’t misplace it. Ask the student if they mistakenly put the test in their binder or folder. I’ll just bet they did!!
I’ve lost a test before. I’ve also had students walk out with a test in their binders. I gave the student some choices: (1) Average your quiz scores and let that stand as the test score. (2) Retake the test. (3) No grade for now and then take the score from that unit section of the final as a retroactive test score.
I would ask verbal questions to determine mastery of the topic on a letter-grade basis and be done with it.
