I don't know if ithese are unknown but:
-Huynhs is a good local spot for pho and bun
-Doña lena blew up this year but it's a great taco joint
-Katz Coffee is a great local roaster and they have a free cafe onsite
-Magnol is a hole in the wall french bakery that is consistently rated best croissants in Houston
If you like Asian food, join FB group “chow down in Chinatown - Houston”. 40k ppl. Lots of recommendations.

I feel like these places are far and few between these days. Social media has made it virtually impossible to keep anything a hidden gem. The hidden gems are just gems that are old and faded from the spotlight.
There's good pho everywhere. A different type of pho place is Les Baget.
Not so many quirky shops but a cute area of town is the Historic Heights. They've technically got a few unique shops along the strip.
Realistically, what makes Houston special is the diversity - which isn't hidden. You want to explore Houston? Try Indian food. Ethiopian food. Serbian food. Filipino food. Mexican food.
Kelley’s restaurants are old school diner fair with huge portions. Check out their charger than life chicken fried steaks!
