I'm new to this and looking for advice. I've got a candidate who's been checking in pretty regularly for updates, but we're still in the middle of interviewing other people. I want to be honest that there's no news yet without making them feel like I'm blowing them off. What works well for you when you're in this situation?

I would let them know that interviews are in process and you don't have new information, but reassure them that they're still being considered. Give them a date by which you think you could have an update and invite them to reach out if they don't hear from you by then. It's important to make sure candidates feel seen & respected, but equally important for you to manage your workload/efficiency.

Other comments have already hit the nail on the head, just be honest and tell them you don't have an update.

If they keep following up what that tells me is that expectations haven't been set around a timeline. It's better to be the one reaching out to the candidate than the other way around. What I do is set expectations with candidates around when they can expect to hear back from me. I give them a specific timeline, say for instance, Monday, and then put a reminder on my calendar for that morning. If I don't have an update yet, I send a quick note to the candidate that simply states:

"Hi {candidate},

Just a quick note this morning to let you know I haven't forgotten about you. I'm following up this morning to share an update on our timeline as we continue to move through our process. We're still completing our {#} round of interviews but are nearing the end so you can expect an update on {day} as we finalize this stage of the process.

It shows that you are still engaged with them and sticking to your word about providing updates. It takes just a moment and has a surprisingly big impact. And of course, if you get an update sooner, you look even better.

At least you know that they are VERY serious about this job. Sometimes dedication is better then relative job experience.

All you can do is be honest about the situation without getting too specific. I would just say we are still reviewing applicants and you remain under serious consideration. I will be in touch with you once I have more information.

I agree with the other comments however, how long as the interview process been going on, 2-3 weeks should be sufficient get through interviews.
