If you work for the product company, you’ll never truly be consulting. More so pure implementing and the solutions to all your problems will come from your company. Like glorified marketing for upsell.
In real consulting, you can just find the right solution that makes the most sense.

Implementation partners and product companies do different work so you would have to be interviewing for two fundamentally different jobs.
I previously worked at an ISV. I found myself working pretty much entirely within the features of our software and very little Salesforce features. I interviewed the nCino and found their salary to be very low compared to consulting, doing similar implementation work, likely informed by their North Carolina HQ COLA. May have changed since they went public.
With a product like nCino, especially if you enjoy the FS space, could solidify the niche you are building yourself in the industry cloud space which could be more beneficial should you decide to work as a freelancer in the future. Are the roles at both relatively the same or do the job descriptions outline something different for each?
