I would say go for MLops. You already have data science skills, add additional MLOps on top of data science/

From deloitte I also joined Resmed as an MLE.
I would suggest you go back to recheck the reviews, hire fire must be for the sales team which takes care of products being sold in India.
I would suggest reach out to MLE, DS or DE from resmed and they will paint the right picture of tech delivery team.
It's a great org, great people and kind of DS/ML stuff we are doing for patient risk modelling is worth having in your resume.
Resmed is 35 years old listed company worth close to 50B dollars. It is stable then most companies you can think of.
How is OP's offer? 44 Fixed + variable for 6YOE(9years in total).
Are there any other significant component like RSUs or 20%-30% bonus, etc. etc.

Money is not an issue as of now, as my CCTC is under 20, I'm more worried about gaining good skills which could get me a foot in the door for big tech + not having to worry about getting my a** handed over to me.
Chubb MLOps is nice + people I met were really knowledgeable and went into depth. The role requires Ops skills more.
Resmed has a SaaS product lines. The confusion here seems to be from the idea that core product data science might be beneficial(I've no clue - I'm from big4), as Chubb has a high red tape, and the most of the work gets stalled at POC levels itself.
Resmed advantage : core DS, medical products domain(medical), good peers assuming, 5 lakh more in fixed
Chubb advantage : MLops work(emerging and will be in great demand + you already have DS work), good WLB
