Just let them know you are leaving for a new opportunity. You don’t need to give details. When you resign, it should be a two sentence letter saying you resign and wishing the company the best of luck. Btw, make sure you aren’t violating your noncompete before you resign.
That is a good point. However, unless the OP is super high up or seriously burned some bridges, it’s hard to imagine EY would take on the time and expense to actually sue the OP.
That being said it’s definitely worth being super careful.
Don’t say where you are going, and wait a couple of months to update your LinkedIn.

To whom? Talent, peers, boss? Newsflash...it doesnt matter. Its a better opportunity...case closed. Better comp, wlb, opportunities, etc. Be cordial/professional and move on.
You don’t need to tell your employer who’s your next employer. You just resign.
If it’s the same work, what is the motivation to jump? If mainly comp and you like your current team/clients, then you’ll likely get a counter to match. Which has two great benefits, you don’t have to rebuild your network and your timeline for promotion is not reset. If other than comp and/or you’re not a fan of current team/clients, then you can simply say a practice that better aligns with your interests, goals, etc without stating the firm (although obfuscating is almost a little strange since jumping firms is so common in consulting)
