Like, undergrad internships?
So, you’ve got a place at a business school. And you’ve quit your job, but have time before you start school. So you want firms to hire you before you’ve actually learned anything at business school? Why not just apply for the job? Seeing as your skills are the same.
The mid-MBA internships are part of the on-campus recruitment organised by the business school. It’s not really a perk for the firms, it is just a cheap way to recruit as they can try before they buy and pay minimal fees (if any) to the recruiters. I would imagine, therefore, pre-MBA internships are rare.
Never heard of a pre-MBA internship

The places I've heard that do this are more in industry.
Have not heard that EY does this that I know of.
If you look at it from the company's perspective, they're looking to lock in talent so that they don't have to compete later on during internship and then full time recruiting.
The people I know who committed very early to an internship that came from an early interview or one of these pre-mba internships regretted where they ended up for their internship.
I believe there are a number of pre-MBA conferences for MBB and maybe Big 4, as well as some fellowships and other programs. All easily found online. Not sure about full-on internships. I did not apply to any so I have no further details.
Apparently Deloitte does have a summit of some sort
