We just got back from 4 nights at the Polynesian. Did Hollywood Studios followed by a day at the resort and then capped it off at Magic Kingdom.
We have a 9,7 and 4 year old and Hollywood Studios was their favorite by far but they’re more into Toy Story and Star Wars than Mickey.
FWIW, the parks are packed and 3 out of the 5 of us came home with Covid.
The only way I would go back is staying at the four seasons.
There's a Sheraton bueno vista townhouse community nearby with lots of pools and outdoor activities for low key, cheap stays with kitchens and separate bedrooms. Also a Gaylord hotel with a water park there to hang out. Consider a Disney resort if you want to get in 30 minutes earlier and save some time in lines. For 2 days at the park we like to do magic kingdom and Hollywood. For your older kid, you may like Epcot more due to frozen, ratatouille and the new guardians of the Galaxy ride.
We literally just did those trip (6yo boy / 3 yo girl). 6yo was kind of “over” some of the Disney stuff but 3yo loved it.
We thought about multiple parks but just did magic kingdom over 2 days… better decision we got to see the whole park / do almost rides (some have height limits) with the Genie+. Ended up walking like 15mi so rented a double stroller the second day.
Stayed at Hilton Signia - had a shuttle bus to the park tram / ferry. It doesn’t wildly inconvenient or that long but was an extra step.
We went early to park - back to hotel for midday nap then park again early evening. Worked well - no explosive tantrums, avoided heat of day, avoided major crowds. We almost bookend the trip at home - so arrival was spent at pool/lazy river - followed by 2 park days - and then half rest day at hotel again
