You could always look into your short term disability benefits… most plans allow for you to take up to 26 weeks for mental health, with supporting documentation from your physician… FMLA is also available and can run concurrently for up to 12 weeks, with job security… should you go past those 12 weeks you may be at risk of losing your role…

The "with supporting documentation from your physician" is the sticking point, though. Insurance companies work diligently to deny disability claims, and they will harangue the physician incessantly to provide more and more evidence that the person's mental health is bad enough to require some time off. They're just as bad with physical ailments, too. I've seen too many of my employees over the years denied disability benefits by insurers.

Are you criticizing your boss for wanting you to do your best, though? If you are truly incapable of doing your best work -- something that everyone should try to do -- then quit. No job is worth your mental health.
You can TRY to get medical leave, but know that insurance companies dictate whether your stress qualifies for short-term disability benefits. Not you, and not your doctor. Your doc may be able to certify that your stress level qualifies as a serious medical condition under the FMLA, but that's unpaid leave in most states.
I'm assuming you're in the US.
Think about looking around. I have worked as Patient Access, there are many openings, try hospitals. The group I worked in had at least 40 people . Turn around in that position tends to be high.
