Have you talked to other associates about how they work with them? Could you be reading too much into it? If you’re the most junior on the matter it makes sense to do the jr level work. Even if I’m (senior) working solely with a partner, I’m running redlines if we need them. But you can always approach it from like “for efficiency, I’d like to delegate this to a junior. Do you have a preference on who I use?”

Maybe have a conversation with her in which you say something like, "I'd really love to get some experience doing X. Would you be open to me helping / participating / taking a piece of that on next time?" And then knock it out of the park. Part of the reason seniors and counsel may not delegate more, especially on deals with tight timelines, is out of worry it's going to take longer for them to fix something than it is to actually do it themselves. Try to find opportunities to prove that fear is misplaced and delegating some meatier things to you will make her life easier in the long run.
Save any emails that you think show this. Ask for advice from people she likes to work with. Sometimes these things can be fixed, other times it is just not a good personality fit.
