I’ve found wet food with gravy (fancy feast or high end brands) with more liquid added (like delectables pouches with gravy or churu) on top usually gets eaten. Also warming up food a bit helps as does serving on plate to avoid whisker fatigue. I’m also trying smaller portions more often. Hopefully one of these ideas helps!
once for my elderly cat who wasn't eating I went to the store and bought several cans of different foods - lined them up and he ate one of them, the stinkiest one. He was very sick and after that I only fed him treats and that canned food since it was all he wanted to eat. he would refuse to eat anything else. Good luck
I’m dealing with the same although mine is in excellent health so it’s even more perplexing to me. Some days Fancy Feast works, other days expensive tuna in broth. But the key always seems to be liquid. The last few days Delectables broth has been very helpful. 🤷♀️

My old lady only wants to eat treats now. You can find some treats that have proper servings (greenies tend to), and it helps.
Another thing we found out is she gets nauseous so getting some zofran pills can help, or worst case appetite stimulant.
Try putting a bit of Churu on top of his food.
My 16 year old cat loves boiled chicken - particularly dark meat which works out because my picky dog loves the white meat so I cook both. Tuna and the oil or water also has been popular.
You can also give nutrical if they are really not eating (until you can get Mirataz from vet)
One of my older cats would only eat when I made it to an almost liquid consistency—I put dry food, water, and canned food in a food processor to get it to the right consistency he liked.
I add water to my senior cat’s wet food and top it off with some broth or churu to get him to eat more… it does help…
I microwave wet food for 10-15 seconds. Gives it a stronger scent and my kitty finds it more appetizing.

One of my kitties almost made it to 20, he became a picky eater - the more broth the more he liked it. He began eating only the various chicken flavors.
Ask the vet to check his teeth as well.
Does he have a thyroid issue? If so, meds might help him with his appetite.
If he has hypothyroidism there is a shot they can give them to cure it. They have to go to a specialist vet for it and have to stay for 2-3 days depending on the state regulations bc they are radioactive but we did it with my cat and he’s so much healthier now and back to himself.
Please try to give him boiled and finely cut chicken breast. It cooks really fast. My finicky cat can’t resist it.
I mixed crushed up dry food, wet food, and a little warm water to give my old guy to a sort of slurry consistency—easier on their teeth, helped with hydration, and dry food is more calorically dense.
