I haven't questioned my entire career, but I think it's normal to think you can't keep up. No one will ever keep up with everything, it's simply not possible. There have been times in my career, especially when I was a new mother where I just accepted it and was ok with doing enough to get by. My kids are 5 and 6 now and I go through phases where I have more time for self paced learning than others (generally still targeted at projects I know are likey to come up). IMO there is nothing wrong with just in time learning either, where you wait until you need to know something for a project to learn it. Not everyone is spending their weekends on side projects (I'll never have time for that) and still do just fine.
I've been there. Like what GE said, no one is on top of everything. Focus on what you need to focus on and you'll be okay.
Perhaps it isn't the career itself but the company? Do you feel like you're being stifled? Maybe you're due for a change in environment. Move on to better opportunities for growth.
