Flip it around and ask to understand the interview process. From there you can ask follow ups and how you have seen others conduct their interview process.

I have done this after I got the offer. I told them the process was too long.

UPDATE (RE: SoCal Assistant Controller Interview)

So after two weeks of waiting (and giving up on the idea of getting the job really), the recruiter got back to me.

They said due to month-end and quarter-end close they were busy and couldn’t get back to me as quickly for a “good update”.

The recruiter said the CFO enjoyed our call, she, the CFO, will call me next week directly to “discuss some final things”.

Not sure if Im hired or not, but are there any questions about the job, comp (cont.)
