On the technical side it's pretty critical to read resumes. I read every single one before offering a formal interview.
Re: unrealistic ramp up times:
A lot of start up CEOs are still inexperienced in setting up the type of business they're running and have never really experienced execution effort before at the scales they're expecting.
Same with founder teams that don't have technical expertise within their ranks, unless they know someone with deep technical expertise that they can bring on board as a CTO. What they think would take 1 software developer a month might take a whole team with diverse skills.

What a newCo wants with 10 years of industry SaaS enterprise sales experience is a) survivor bias/track record b) relationships. Both of those feed into the probability you'll be successful.
The problem for Newco, is candidates who've got the 10 years and been really successful in SaaS Sales have golden handcuffs - they are making bank at OldCo, so require a far higher comp, title, responsibility and perhaps equity to match comp + take on a new career risk, than the NewCo can reasonably meet.
That gap in the market is your window of opportunity to differentiate, but will unlikely come through Talent Acquisition as you don't fit their mandate even if given wide latitude.
IF you have sales track record (eg specific relevant measurable value and benefit for a sales team) build a list (hundreds) of SaaS co. Now, demonstrate your sales skills - prospect all the potential hiring managers at Cos, learn about co, learn about them/their career/interests, reach out to them on LinkedIn/Email, build a cold email campaign for each. If there is one group of folks who will take persistance + persuasion skills seriously, its sales leadership.
Treat them like they are a potential customer you want to do business with. Ask questions around their requirements, do discovery calls. Be memorable. Kiss a lot of frogs. Good Luck.
