I try to be as indirect as possible to drag out real responses - I ask candidates to walk me through what led them to switching jobs, which were the most enjoyable changes, which were the biggest challenges - try to look for the nuggets of information that suggest they thrive in a working environment or not. I’ll ask them for examples of being in high stress environments that they flourished in or struggled and hunt for “the job really wasn’t what I expected it to be, so I had to get out” or similar comments that would be red flags.
My favorite baseline information is examples of where they got out of their comfort zone and had to adapt - semester/year abroad, mission trips outside the US. And I’ll ask them a lot about it to dig in to how much they actually threw themselves into local life or did they stay in a bubble surrounded by other Americans. Anything where they not only needed to adapt but threw themselves into it. Bonus points for non-English speaking countries, extra bonus points for learning the language (whether part of their studies or not).

Ask behavioral questions - eg, tell me about a time when there is a lot of change. leave it open so they’re response. Could tell you if they liked the change or did not, they responded, etc.
