Perhaps consider doing both in 2 separate days. It's a bus ride away (cheaper and seats are more available than train). Can be planned as day trip (head out there early morning and come back to Madrid in the evening). Those 2 spots are just different. Be prepared to walk A LOT, esp Toledo (old town is hilly). As usual, bring water

Was in Madrid for a short time, we did a paella making class found through Eat With also did a winery tour which we absolutely loved (https://www.gourmetmadrid.com/en/madrid-wine-region-tagus-river-valley/) . We took a day trip to Toledo via Viator which included lunch and lunch was horrible/in edible. Tour was ok. Probably could find a better tour company. As far as Toledo it is very hilly and brick/cobblestone so definitely need comfortable walking shoes.

+1 on recommendation to see both Toledo and Segovia. As already said above, be prepared to climb steep hills in Toledo. They are both must-see. We took the train to both (short walks to town from their train stations). Madrid is also a fun city. Recommend to book hotel near Atocha station where you can easily access trains and subways. Watch for pickpockets. Not as bad as in Italy but the locals did remind us to be careful on crowded subway cars.
