I think there are different stages of a company and based on that there are different metrics. The basic ones are to describe what happened, the next step is to use metrics that will tell you why that happened and you can stay in these two stages for a long time. I have never seen a company that have predictive or prescriptive analytics

Hiring Managers likely want to know about passthrough rates. They will also want to know how many interviews they will likely have to do before they make a hire.
For Recruiting teams, that can be tricky. You want to align what you look for with the team goals then build to that (ie if you have a DEIB goal, then you want to include those metrics)
On the coordination side, we like to measure how quickly our coordinators can schedule interviews, so we track the date they received the scheduling request, any incidences of reschedules, and the date of final confirmation (when they sent the final version of the invites and confirmation emails to the candidates). You can only get people hired as quickly as you can get them in front of an interviewer, so measuring those in trackers helps measure how efficient an interview process is as well.
