There wouldn't be any reason to bring that up in an interview. People applying for jobs presumably are familiar with conditions in their profession. If someone asked about it, we'd give them an honest answer about what options might be available. It might be considered odd for a candidate to bring it up, depending on how it was mentioned.
I wouldn't bring that up unless they bring it up first. They are going to figure out very shortly after starting that you are understaffed if that is the case. Sometimes honesty is the best policy.
