There are many companies that talk about their values and traditions. Most of them are full of it. It's another way of not paying you what you deserve. They can also use it to fire you, because you didn't live up to their perceived values. Values become self evident. Not only for employees, but for customers also. Be wary of companies that talk too much about their values and traditions.

Very true. Culture is the same way, if you’re obsessed with talking about your culture, that may be a red flag and something that becomes more evident as you are immersed in it
Yes. They are very important. Unfortunately I've found you don't really see their true values until you have worked there a while.

Indeed. They can say one thing, but actions speak louder than words. Many times, you don’t realize their actual values until they you’ve realized their actions are contrary, sadly

For me company values matter more once I’m already inside and seeing whether they actually live them. A lot of places say the right things on paper. What usually matters more is whether leadership and day to day culture actually reflect any of it. If the values are real, great. If not, they’re just wall decor.
