I have removed education dates and all experiences from more than 20 years ago. I made this change during my last job search after getting zero interest.

On my resume I only keep the last few years, but on my LinkedIn I keep everything. Partly because it shows the important start to my story in human services work. I also feel like if you want to keep scrolling on LinkedIn that's a great place to see someone's entire history. Whereas the resume has to be more compact.
That said, I was privileged enough not to have any jobs before I graduated with my Bachelor's. II had something like waiting tables in high school I wouldn't have that on my LinkedIn just because it's not really relevant to my career story (unless of course it was relevant to my career story).
That's kinda pointless about hiding your age. From your degrees alone they can probably tell. What point are you really trying to make?
I keep it all with dates despite being mid 50s. I get deposed on employment gaps....which do not exist...and have to explain why I started my first job while completing my doctorate. Weirdly attorneys half research this as a gotcha moment and then end up with egg on their face when I explain I worked full time in consulting, was completing a dissertation, and birthed a child.
