If I start searching for new job, will that HR ask about recent offer letter? Or only salary slips are enough?

If you're working for someone prone to displays of anger, it's probably a good idea to start planning your exit and put out feelers and look at listings for other jobs. People like that generally don't improve, that's the way they are. Beyond that, just try to avoid his tantrums, I suppose. Do your work as best you can and realize that his personality is not a reflection on you, he's probably been that way forever.
I agree, it’s time for you to find another job.
If you are in NJ, call kipnis law. Or definitely call a lawyer that deals with employment harassment. You have rights. Don't stand for this abuse, it's not worth the paycheck.

I'd say, document as much as you can (safely, legally and strategically). And then start planning your exit. The best time to job hunt is when you have a job.
When they have released anger try again to approach and apologize. Shake it off and do your best. Maybe bring favorite coffee or snacks?
