If you like your current role and they countered with a higher salary- id stay.
The grass is not always greener and while money lures several people to new jobs, it often turns into a golden handcuff situation where the pay is higher, but the work and environment turn out to be lackluster.
Ive worked for bad employers and enjoying youre day to day work and team is worth more than just a paycheck.
A lot of time the situation is reversed. You dont like your current work, get an external offer and your current employer counters to keep you. Stats show that people often still leave within 6-months.
Food for thought
Just like the previous feedback- 80% of people leave within 6 months of accepting a counter offer.
I would ask, did you seek out this offer? Either way you were open to listening to another opportunity. That could say something.
If you are happy where you are that also says something. Is it always about the money, I would say no. Also, would matching/exceeding this offer only happen as a result of another offer? (Thinking about culture and pay equity/transparency)
I think it really comes down to motivators.

If you like your current role and they counter offered, accept the counter offer. It sounds like you know that’s what you want to do. You just need someone to say it.
If pay was your only reason for leaving then stay. Otherwise go.

So it takes counter offers to get get better compensation at your company. Why would this make you stay?
I never counter offer because I can never make a person who’s trying to leave happy. Whether looking outside to manipulate compensation or to genuinely look for other opportunities, the end game is the same: the person will leave.
