Onboard in both the companies and then based on work and which company you like, you can abscond from another company.
Even through it was sarcastic replay, it is some people do think of doing.
Recently someone did ask me same question if they should join 2 companies and abscond after they feel one of them is better than other.
I was amazed by that question.
I advised person never to do that even in his dreams as that As it’s not ethical and can ruin future if get caught .
Just tell company B that you will not be joining as soon as possible. If you are so unsure about company A joining process, then why join such company? You can't have your cake and eat it too, just let the company you are not joining, know about your decision.
Ethically, if you've made your mind to go with A, tell B well in advance that you wont be joining them because of XYZ reasons. If you think A might not onboard you, despite the offer letter, I'd suggest to stay away from A.
I would advise to inform company B about the decision as early as possible
