if you’re not taking any time away from yourself or something important to skim your emails on Sunday than I don’t see the harm in it. If you’re missing out on family time or you’re staying up late and neglecting yourself to go through your emails then it’s a waste of time leave it for Monday. But if it helps you sleep better on Sunday night to take care of it. I say do what you need to do.

Thanks, I might give it a go and try not to do it one weekend, but if it's better mentally to keep up with it, I've done it for so long, may as well continue.
Checking emails on days you are not scheduled to work is still legally considered working. From an HR perspective, I have to ensure employees do not work after hours or skip their breaks. If checking emails during non working hours is not a company need and is just to get ahead, the company and HR may not approve. There are legal cases around unpaid time, and this is not something companies typically condone. My advice is to follow your company’s policies. As HR, I would never want an employee to work without pay or an employer to face legal liability for unscheduled work.

Understandable. I do clock in if I actually do any of the tasks and they are fine with it.
I used to do this as well, but I've stopped significantly. Work used to consume me and checking emails at night or on weekends would just ruin my personal time. I just couldn't shut it off and eventually it lead into "scary Sundays" to where I just would not get any sleep at all stressing about what needed to be done on Monday. To ween myself off, I would just wake up Monday morning and check my emails before getting ready for work. For some reason I've found I brainstorm better and am able to arrange my workday while in the shower.
