Usually the thickest part of the meat will be the lowest. Get it close to the desired temp, it will get there once you take it off the heat and let it rest.

Get the Google Home system to replace your current home thermometer. You can regulate the house / apt temp using your phone and save almost 50% off your bill from energy saved it’s amazing

At what point do you draw the line on WLB? Working insane hours on a long/term project with what feels like no end in sight. It’s not sustainable but clearly expected. Could you get fired for drawing lines in the sand and saying (example) “come 8:30 every night I’m logging off”. That’s a 65 hour work week as-is but I currently am up until midnight working consistently. For context I’ve been rated as a strong performer consistently and am not new to the job so it’s not a lack of understanding.
